Peppermint steeped into our honey until the mint reads as clean and cooling rather than sharp. The honey stays in front; the peppermint arrives just behind it and lingers.
Stir it into black tea or hot chocolate, spoon it over vanilla ice cream, or use it to finish a lamb dish if you are feeling ambitious.
